Sweet & Simple Chicken Salad

When the training for Mat (and Tia!) kick up a notch, I make sure to have this Sweet & Simple Chicken Salad stocked in the fridge. The grapes add a refreshing pop of sweetness and the remaining ingredients provide some needed calories and protein for fueling the day of training ahead. This makes for a great snack on it's own or serve it between to sliced of toasted bread for a hearty lunch.

Saturday’s Shakshuka for One

On Saturdays I like to hit the local Farmer’s Market. When I get home, I peek through the pantry and fridge to see what I can pull together with my farmer’s market finds. If ever I have an excuse to make shakshuka, you better believe it’s happening. It’s a great meal to whip up for brunch in a large baking dish that you can toss in the oven. It's also great for a simple stovetop hearty meal for one! My favorite part about shakshuka is that the base of the meal stays the same but the ingredients can change every time.

Grilled Peaches & Ice Cream

Tis the season for sweet stone fruits and I'm not mad about it! Peaches, nectarines, apricots, and plums are some of my favorite fruits and, like most things, they are just incredible when they're in-season. We've been dropping cuts of plums into our bowls of yogurt or stirring peaches into warm bowls of oatmeal so why stop at breakfast?! Bust out your reserve of homemade vanilla ice cream and enjoy a dish of hot AND cold, sweet AND spicy!

Sweet Coated Smoked Turkey

Smoking a whole turkey in July?! Why wait until the holidays to have all the delicious carved turkey for turkey sandwiches? My point exactly! Not only did I get to hone in my holiday cooking skills and perfect this turkey a few months in advance but we got enjoy a turkey outside of the holiday craze, heavy mash potatoes and pumpkin pies. The turkey sings on its own and our daily turkey sandwiches have never been more crave-able.
