Fresh Peach Salsa

I'm not a dunker, I'm a scooper. In my opinion the chip is just an edible shovel when it comes to salsa or guac. I want to scoop as much goodness onto each chip as possible. This salsa was so fresh, a little sweet and a good kick of spice all in one bite. It would have been a great addition to some grilled shrimp or pork but trust me, once the chips were out this bowl was devoured. With how quickly it comes together, it's great for entertaining and impressing your friends on a summer BBQ day. Save this one for the weekend!
Overnight Oats

We eat a LOT of oats in this house. You can’t go wrong with a warm bowl of porridge creamy oats. If you add warm sautéed cinnamon apples or caramelized bananas on top and it’s basically dessert for breakfast. With this summer heat creeping in I’m trying to keep the core temperature low and these overnight oats served COLD are the ticket. Get creative with your toppings! Shrimp Ceviche

There is nothing simpler and let's talk about FRESH. I love how bright this dish is. Full of flavor, a little kick from the jalapeño and a touch of sweetness from the mango. Is there anything else you could possibly want from a dish?! I think not!
