Saturday’s Shakshuka for One
- 1 tablespoon olive oil
- 1 cup kale, torn
- 1 cup fire roasted tomatoes
- 1 heirloom tomato, sliced and cubed
- 2 teaspoons Trader Joe’s Chili Onion Crunch, divided
- Salt to taste
- 2 Pete & Gerry's egg whites
- 1 Pete & Gerry's whole egg
- 1 English muffin, toasted
- In a small fry pan over medium heat, add the olive oil. When the oil shimmers, add the torn kale, tossing frequently until slightly wilted. To the kale, add the fire roasted tomatoes, fresh heirloom tomato and 1 teaspoon of the Chili Onion Crunch. Simmer for 5 minutes.
- Make a well in the tomato mix and add the egg whites and whole egg. Cover and cook on low until the egg whites are set and the yolk is cooked to your desired doneness. Serve with the toasted and buttered English muffin for dunking and scooping up the luscious yolks and fresh tomatoes.
