Greek Meatballs

Posted by Samantha Moniz on

I love these meatballs because they are PACKED with flavor. They also keep well in the fridge and are even yummy served chilled. I love a simple meal that comes together with ease but impresses your hungry guests. I can always tell by the various groans and grunts between bites that I've hit a home run. This is a go-to recipe for that lingering ground meat in the freezer, great to switch it up when you want something other than a burger or a Bolognese.

We CRUSH granola in our house. We've essentially eliminated buying cereal altogether and have bowls of granola with almond milk instead. Not only is it a better option but it's more versatile. I have begun to double the batch and still I find I'm making it at least twice a week. I'm so happy that we've got a recipe we can rely on as well as one easy enough to swap out ingredient and have a fresh taste each time. Swap in different nuts or change the almond butter for peanut butter and it's like a new recipe!

Posted by Samantha Moniz on

I made these yesterday and I ate them for both lunch AND dinner. Now they’re gone and I’m a little sad because they were DAYUUMM good. I haven’t always been a stuffed pepper believer, they’re a little time consuming. The reality of it is you’re taking extra time and care to build this little edible bowl. When you’re ready to enjoy it, you’re cutting it down into a mish-mosh on your plate. What’s the point?! Well, the point is we’re in quarantine and we’ve got the extra time to slow down and stuff the dang peppers. For me, it’s that simple!
