Greek Meatballs
- 2 lbs Ground (beef, chicken, pork, mix)
- 1 onion, grated
- 6 cloves minced garlic
- 1 tsp ground pepper
- 2 tsp salt
- 2 tsp cumin
- 2 tsp oregano
- 1 tsp cinnamon
- 1/2 cup parsley, minced
- 2 eggs
- 1 cup panko
- Preheat the oven to 400°F.
- In a stand mixer, combine all ingredients and mix on low for 3-4 mins until well combined.
- Using a small cookie scoop, portion each meatball out and roll in between palms to smooth. Space evenly on a parchment lined baking sheet. Bake for 25-30 mins.
- Serve with rice or orzo, roasted asparagus, fresh tomatoes and a quick Tzatziki sauce.
Tzatziki: mix 1/2 cup plain greek yogurt, 2 tsp fresh dill, 1/4 cup grated cucumber, 1/2 tsp za'atar seasoning and pinch of salt to taste.
