Garlic Steak and Parm Frites

Talk about a simple date-night steak and potatoes dinner. Most of our meals are consumed just like this... the #wellfedfraser gets a beautifully plated meal (straight from the "photo studio" in our dining room) and I stand over the trays of food picking with my hands. It's my favorite part of the day. I love those first bite reactions and this meal got a few "oOoOoOo's" and "oh wow". It may look simple but this dish packs some flavor.

Garlic Roast Bird w/ Charred Lemon Chimi + Charred Onions

This dish may look fancy but I promise even the most novice home-cook could whip this up. All the ingredients are tossed onto one sheet pan and cooked on the Traeger for that wood-fired flavor. Let's also talk about the star of this dish, the chimichurri. I would eat a leather boot if it were covered in this stuff. No better way to get an added dose of freshness than with a sauce of fresh herbs and yummmmmy EVOO.

Stuffed Peppers

I made these yesterday and I ate them for both lunch AND dinner. Now they’re gone and I’m a little sad because they were DAYUUMM good. I haven’t always been a stuffed pepper believer, they’re a little time consuming. The reality of it is you’re taking extra time and care to build this little edible bowl. When you’re ready to enjoy it, you’re cutting it down into a mish-mosh on your plate. What’s the point?! Well, the point is we’re in quarantine and we’ve got the extra time to slow down and stuff the dang peppers. For me, it’s that simple!

Herb Axis Steaks with Cranberry Sauce

Mat's been hunting once and we had about 70# of axis meat to prove it! This was a little over a year ago and while most of the meat has been cooked (or gifted) I occasionally find a package in the mix of the deep freeze. Pulled up my trusty Traeger App and found myself a perfect recipe for what I had in stock. While the recipe may have called for a delicious-sounding huckleberry sauce, I'm grateful to have found a classic can of cranberry sauce in the pantry to get the job done. Nothing like some strong herbs and cranberry sauce to pair with Axis steaks, it's a match made in heaven!
