Herb Axis Steaks with Cranberry Sauce

Herb Axis Steaks + Cranberry Sauce

  • 2 tbsp olive oil
  • Axis Steaks
  • Pinch (or two) kosher salt
  • Pinch (or two) black pepper
  • 1 tbsp rosemary, chopped
  • 1 tbsp thyme, chopped
  • 1 tbsp sage, chopped
  • 2 sweet potatoes
  • Cranberry sauce for serving
  • Parsley for serving
  1. Preheat Traeger grill to 375. Rub venison steaks with olive oil, season with salt and pepper and rub with chopped herbs. 
  2. Using a fork, poke scattered holes in the sweet potatoes and wrap in aluminum foil. Place sweet potatoes on the grill for 20 minutes. Once the potatoes have roasted for 20 minutes, place the steak on the grill and roast, flipping once, until internal temp reaches 130, about 20-30 minutes depending on size. 
  3. Remove steaks from the grill, rest for 10 minutes. Remove sweet potatoes from the grill once they've become soft to the touch, about 40-60 minutes depending on size.
  4. Serve steaks with a side of canned cranberry sauce topped with a sprinkle of fresh chopped parsley.
