Peppercorn Roast Chicken

I made this whole roast chicken the other night and juuuuuust as it finished cooking, we lost power due to a crazy wind storm. The timing was perfect! That power outage had us doing things we never do.. taking pictures with a FLASH and eating by candlelight only. We might not have been able to see but boyyyyy was this dinner delishhhh. A simple peppercorn roast chicken does the trick. Top it off with some chimichurri and serve it with rice and steamed broccoli.

Honey Dijon Chicken & Rice Pilaf

If you don’t yet know the full story behind my love affair with my Ninja Foodi, here it is. I bought one last year in Madison, WI (on uber sale with 3 coupons!) so I could cook in my hotel room for Mat during the CrossFit Games. We had pulled pork tacos and juicy chicken thighs and all the things we love to eat at home, expect we were hundreds of miles away with daily turn-down service. WIN, WIN (WIN, WIN.. if you know what I mean 😉) I’m here now with the newest for @ninjakitchen Foodi, the DELUXE. It’s truly a one-pot-wonder. Only a handful of pantry ingredients and altogether 30 minutes to whip this dish up for the family. Enjoy some time cooking for the ones you love!

Butter Chicken

It’s a chill and rainy Monday here. On days like today I just want comfort food, something that warms you from the inside out! Not only is this what I’d call “slap-together” meal but it’ll warm your bones. I made this in a pressure cooker but you can easily make this in a slow cooker as well (low 6-8 hrs or high 4-5). Every cooker is a little different, you know yours best so use your judgement and enjoy!

Thai Peanut Chicken Ramen

Hardest part about being on the road (for over a month) is being away from my kitchen. I may have traveled with my meat thermometer because why GUESS if something is cooked juuuust right when you can KNOW. Sadly, I didn’t have room in my luggage for my Ninja Foodi. If I could suggest every Airbnb and hotel around the world make that a standard amenity that would make travel a million times easier for me. Too dramatic? This is another homerun-hit from @halfbakedharvest ..whenever I’m in a creative lull I flip through the pages of her years of content and know I’m bound to find something I’ll enjoy cooking and the #wellfedfraser will enjoy eating.
