Butter Chicken

  • 1/2 sweet onion, minced
  • 4 cloves garlic, minced
  • 1 knob fresh ginger grated (or 1/4 tsp ground)
  • 2 tbsp garam masala
  • 1 tsp paprika
  • 1 tsp ground turmeric
  • 1 tsp cayenne
  • 1/2 tsp kosher salt
  • 1 (one) 6oz can tomato paste
  • 1-2 tsp red curry paste
  • 1/2 cup water
  • 2 pound chicken thighs, cubed
  • 1 (one) 14 oz can coconut milk
  • 1 tbsp salted butter
  • 2 tbsp lemon juice
  • Cooked rice
  • Naan
  • Cilantro

 

  1. Set Ninja Foodi to saute on HI. Add garlic and onion, cook 1-2 mins. Add all spices (ginger-salt), tomato paste and curry paste; cook for one minute. Add the water, chicken, coconut milk and butter into the pot of the NF pressure cooker, stir well.
  2. Pressure cook on high for 6 mins. When completed, do a natural release for 10 mins, then do a manual release and remove the lid. Add the 2 tbsps of lemon juice and stir. Taste and adjust salt as needed.
  3. Spoon over white rice, top with fresh cilantro and serve with a side of Naan.
