Saturday’s Shakshuka for One

On Saturdays I like to hit the local Farmer’s Market. When I get home, I peek through the pantry and fridge to see what I can pull together with my farmer’s market finds. If ever I have an excuse to make shakshuka, you better believe it’s happening. It’s a great meal to whip up for brunch in a large baking dish that you can toss in the oven. It's also great for a simple stovetop hearty meal for one! My favorite part about shakshuka is that the base of the meal stays the same but the ingredients can change every time.
Whipped Ricotta Snap Pea Toast

I cannot get enough of this toast. It's simple, fresh and packed with flavor. Sugar snap peas have such an amazing and satisfying crunch and the little bit of sweat heat from the hot honey just bring this all together. Don't sleep on breakfast toast!
Overnight Oats

We eat a LOT of oats in this house. You can’t go wrong with a warm bowl of porridge creamy oats. If you add warm sautéed cinnamon apples or caramelized bananas on top and it’s basically dessert for breakfast. With this summer heat creeping in I’m trying to keep the core temperature low and these overnight oats served COLD are the ticket. Get creative with your toppings! Leftover (Meatloaf Dinner) Frittata

Would you believe me if I told you there was a Meatloaf Dinner tucked into breakfast this morning? Welp, there is! We love frittatas. Not only are these great for gatherings and brunch but they keep well and reheat like a dream for meal-prep. Another reason I love these fluffy egg pillows is because I can often tuck leftovers from the fridge into the mix, knowing that the bright yolks of @peteandgerrys eggs will transform it into a whole new meal. We aim for zero food waste and considering how yummy frittatas are, you can bet your bottom dollar none of this goes to waste.
