Leftover (Meatloaf Dinner) Frittata

  • 16 @peteandgerrys eggs
  • 2 cups leftover meatloaf, crumbled
  • 2 cups leftover roasted potatoes
  • 2 cups fresh asparagus
  • Salt + pepper to taste
  1. Mix all the ingredients together in a greased 9x13 pan.
  2. Bake in the oven at 350°F for 40-50 minutes or until the center is set and no longer jiggles.
  3. Cool for 5 minutes before slicing.
  4. Serve topped with avocado or drizzle with hot sauce, or both!
