New Mexico Enchiladas

Last month at WZA in Miami, I got a chance to hang with Tommy Marquez on the @talkingelitefitness podcast. We talked all about food and shared some of our favorite home cooked meals. Tommy blew my mind with the version of enchiladas he grew up with called New Mexico Enchiladas. They are stacked, not rolled. The cherry on top of this recipe is that it gets topped off with a few fried eggs. I never would have thought to top enchiladas with fried eggs but now that I’ve done it, I don’t see myself going back to my old ways. There’s a code for ordering these delicious stacks. Here, I’ve recreated Tommy’s order, a 4 by 3. Translation: stack 4 tortillas high and topped with 3 eggs. I won’t be going back to rolled enchiladas anytime soon, and I’ll forever be topping them with crispy olive oil-fried Pete & Gerry's eggs!

Cast Iron Rosemary Focaccia

Focaccia is simply a vessel for olive oil. It’s like the chip in chips & guac. It’s the edible shovel in which to carry heaps of guac to your face. This simple skillet bread is the perfect excuse for drowning something in pools of olive oil. Don’t threaten me with a good time! Top it off with some herbs and a healthy handful of flaky salt.

Sweet + Sour Pork Loin Roast

The day I tested this I’d gone to the store and got everything on my mental list. I got home and I realized I completely forgot a fresh pineapple 🤬. It was on my written list sitting in the kitchen island but never made it to my mental list. I went ahead and worked with what I had. This recipe was BOMB without the pineapple and I know it would have been even BOMBER with it. That’s life! Sometimes we have everything we need to make the perrrrfect meal and other times, it’s pretty perfect with what we have. Especially now, don’t let a missing ingredient keep you from whipping up something yummy. Make it work people!
