Smoked Summer Sausage Pasta Salad

Pasta salad reminds me of summer BBQs in friends' and families' backyards. The carefree kind of summers where you lived in a bathing suit and kept busy for hours running through a slip-n-slide of sprinkler to stay cool. While I may not have a slip-n-slide in my backyard, I have this pasta salad on repeat right now. It's smokey, sweet and spicy all at the same time. The summer sausage used here is a venison smoked jalapeño cheddar sausage from Mat's hunt a year or two back but feel free to use whatever kind of summer sausage you can get your hands on!

Garlic Roast Bird w/ Charred Lemon Chimi + Charred Onions

This dish may look fancy but I promise even the most novice home-cook could whip this up. All the ingredients are tossed onto one sheet pan and cooked on the Traeger for that wood-fired flavor. Let's also talk about the star of this dish, the chimichurri. I would eat a leather boot if it were covered in this stuff. No better way to get an added dose of freshness than with a sauce of fresh herbs and yummmmmy EVOO.

Herb Axis Steaks with Cranberry Sauce

Mat's been hunting once and we had about 70# of axis meat to prove it! This was a little over a year ago and while most of the meat has been cooked (or gifted) I occasionally find a package in the mix of the deep freeze. Pulled up my trusty Traeger App and found myself a perfect recipe for what I had in stock. While the recipe may have called for a delicious-sounding huckleberry sauce, I'm grateful to have found a classic can of cranberry sauce in the pantry to get the job done. Nothing like some strong herbs and cranberry sauce to pair with Axis steaks, it's a match made in heaven!

Traeger Tamale Pie

Smoked Pulled Pork

It may seem daunting to cook something for 5-6 hours but if you’ve got a day at home doing spring cleaning or catching up on chores/yard work, fire up the Traeger and let it do the work for you. I set the prob temp to alert me at each step and used the WiFire through the app to keep an eye on temperature and pellet levels. I can barely take any credit for how yummy this recipe is because the Traeger did all the work! Take time to invest in yourself and a yummy meal for the week. This one pork shoulder gave us about 8 servings/sandwiches, and those are #wellfedfraser servings 🙌🏼
