Stuffed Peppers

I made these yesterday and I ate them for both lunch AND dinner. Now they’re gone and I’m a little sad because they were DAYUUMM good. I haven’t always been a stuffed pepper believer, they’re a little time consuming. The reality of it is you’re taking extra time and care to build this little edible bowl. When you’re ready to enjoy it, you’re cutting it down into a mish-mosh on your plate. What’s the point?! Well, the point is we’re in quarantine and we’ve got the extra time to slow down and stuff the dang peppers. For me, it’s that simple!
Chuck Roast Tacos

What's your fall-back recipe? The one you don't even need to think about and can just whip together? I always seem to have something in stock to pull together tacos I'm really relying on these easy meals these days. It's nice to step into the kitchen and just OWN THE MEAL. If you don't have a pressure cooker, you could also do this in a slow cooker. Quick or slow, it'll be worth the time and makes plenty of serving to last a few meals!

Herby Roasted Salmon

I’m not a mayo-lover. I wouldn’t typically elect to have a dish where mayo is a star ingredient but it just WORKS with dill and salmon. Something about the fat on fat makes it addictive. The dill and parsley are strong enough herbs to overpower the in-your-face mayo flavor and it seems to calm down once baked. This was a simple crowd-feeder and pleaser.
