Shrimp Ceviche

There is nothing simpler and let's talk about FRESH. I love how bright this dish is. Full of flavor, a little kick from the jalapeño and a touch of sweetness from the mango. Is there anything else you could possibly want from a dish?! I think not!

Looking for some fressssshness these days. My last run out to the store these mango caught my eye. We eat a TON of dried mango in this house. It's the perfect sweet treat. I was excited to bring mango into a dish and enjoy it in a spicy and savory way. We also looooove the spice so you know all the jalapeño seeds made it into this guac but fair-tongued-friends beware!
