Simple Steak Tacos
- 2 (6oz) @Butcher_Box flat iron steaks
- 1 tbsp olive oil
- 8 corn tortillas
- 1/2 cup Mexican Blend Cheese
- 1 Jalapeño, sliced
- 1/4 cup white onion, diced
- 2 tbsp hot sauce
- 1/4 cup Cilantro
- 1/2 Lime
- Season steaks with salt and pepper. Heat olive oil in cast iron skillet over medium-high heat, cook steaks 2-3 minutes on each side until internal temp reaches 135 for Medium doneness. Remove from heat, rest 10 minutes before slicing.
- Cook corn tortillas over open flame on stove top for 1-2 minutes on each side until slightly charred (If you're working on an elective stove, you can also fry them in a little oil in a skillet).
- Once steaks have rested, thinly slice against the grain.
- Assemble your tacos! Lay one tortilla down, put 2 tbsp of Mexican cheese on top and place a second tortilla on top of that. Stack slices of steak, jalapeño, onion, hot sauce, cilantro and a squeeze of lime.
