Simple Steak Tacos

  • 2 (6oz) @Butcher_Box flat iron steaks
  • 1 tbsp olive oil
  • 8 corn tortillas
  • 1/2 cup Mexican Blend Cheese
  • 1 Jalapeño, sliced
  • 1/4 cup white onion, diced
  • 2 tbsp hot sauce
  • 1/4 cup Cilantro
  • 1/2 Lime
  1. Season steaks with salt and pepper. Heat olive oil in cast iron skillet over medium-high heat, cook steaks 2-3 minutes on each side until internal temp reaches 135 for Medium doneness. Remove from heat, rest 10 minutes before slicing. 
  2. Cook corn tortillas over open flame on stove top for 1-2 minutes on each side until slightly charred (If you're working on an elective stove, you can also fry them in a little oil in a skillet). 
  3. Once steaks have rested, thinly slice against the grain.
  4. Assemble your tacos! Lay one tortilla down, put 2 tbsp of Mexican cheese on top and place a second tortilla on top of that. Stack slices of steak, jalapeño, onion, hot sauce, cilantro and a squeeze of lime.
