Romesco Sauce
- 2 red bell peppers, fire roasted + peeled
- 1/3 cup sun-dried tomatoes in oil
- ¾ cup hemp seeds
- ¼ cup fresh flat leaf parsley
- 1 Tbsp olive oil
- 2 cloves garlic
- 2 tbsp lemon juice
- Salt to taste
- Parmesan Cheese to garnish
- Place all ingredients into food processor, blitz on high 2-3 mins until fully processed and smooth.
- Serve warm atop grill asparagus garnished with Parmesan cheese.
