Romesco Sauce

  • 2 red bell peppers, fire roasted + peeled
  • 1/3 cup sun-dried tomatoes in oil
  • ¾ cup hemp seeds
  • ¼ cup fresh flat leaf parsley
  • 1 Tbsp olive oil
  • 2 cloves garlic
  • 2 tbsp lemon juice
  • Salt to taste
  • Parmesan Cheese to garnish
  1. Place all ingredients into food processor, blitz on high 2-3 mins until fully processed and smooth.
  2. Serve warm atop grill asparagus garnished with Parmesan cheese.
