PB+J Oat Balls

PB+J Balls

  • Strawberry jam
  • 1 cup dates
  • 1 cup oats
  • 1/2 cup chia seeds
  • 1/2 cup Peanut Butter
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  • Salt
  1. On a parchment lined sheet, scoop 12 small heaps of jam (I used a mini melon baller). Freeze for at least 2 hours.
  2. Place dates, oats, chia seeds, peanut butter, vanilla, cinnamon and salt into the bowl of a food processor. Process until well combined. Divide dough into 12 rough balls. Flatten between your hands, place a piece of frozen jam in the center and fold the edges around to make a smooth ball.
  3. Store in an airtight container in the fridge.

**This can be rather crumbly. be sure to use smooth and creamy PB to help bind. If your mix is still too crumbly to flatten and roll together, add additional 1 tbsp of PB at a time until you are able to bring the mixture together.
