Lamb Burgers with Sun-Dried Tomato Aioli

  • 1 lb Ground Lamb
  • Salt + pepper
  • 1/2 cup Mayo
  • 1/4 cup Sun-dried tomatoes in oil
  • 5 garlic cloves, minced
  • Squeeze of lemon
  • Buns 
  • Red Onion
  • Feta cheese crumbles
  1. Preheat grill or cast iron skillet to med-high heat. Form ground lamb into burgers, season each side with salt and pepper. Grill / Sear 3-4 minutes on each side until golden. 
  2. Place mayo, sun-dried tomatoes, minced garlic and lemon juice into the bowl of a food processor. Process for 1-2minutes until smooth, set aside. 
  3. Assemble the burgers, place burger down on bottom bun. Smear sun-dried tomato aioli to top bun, add a slice of red onion and a sprinkle of feta cheese and serve!
