Honey Garlic Pork Loin Roast

  • 1 ButcherBox pork loin roast
  •  1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt + pepper to taste
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 3 tbsp liquid aminos
  • 1 tbsp dijon mustard
  • 1 tbsp olive oil
  • 1 bunch asparagus, ends trimmed
  1. Preheat the oven to 375.
  2. Pat the pork dry with paper towels. In a small bowl mix together spices (paprika, garlic pwd, onion pwd, thyme and rosemary). Work the spices into pork loin roast.
  3. Heat a large cast iron over high heat, add the olive oil. Brown pork loin roast on all side (3-5mins a side). Transfer browned roast to a large baking sheet and into the oven, roast for 30 mins.
  4. In a small bowl, mix together minced garlic, honey, liquid aminos, dijon mustard and olive oil. Set aside
  5. At 30 mins, remove the roast from the oven. Brush roast all over with the honey garlic mix, reserving some for the asparagus. Flip the roast and add asparagus on either side of the baking sheet. Drizzle the asparagus with 1 tbsp of the honey garlic mix. Return to oven for about 20 mins until internal temp reaches 145.
  6. Rest the pork loin for 10 mins before slicing. Serve with white rice.
